making your own granola is literally so easy i promise. being well-loved by my track, soccer, and swimming teams for the granola i brought to share at meets and practices (rather than incredible athletic ability) is my favorite version of a personality hire.
disclaimer: i never use recipes to cook, so follow at your own risk. but also, have fun experimenting with ingredients and favor combos (see bottom)!



Basic Ingredients:
2 cups or ~200g oats
1 cup or 100g shredded coconut
1-2 cups or 150-200g nuts and seeds of choice. Mix and match!
Walnuts, pecans, sliced almonds, chia, flax seeds, pepitas, sunflower seeds, cashews, macadamias, etc all work great
My favorites are walnuts, pecans, and flax seeds
Teaspoon of salt (flakey is best)
Tablespoon of cinnamon
You can also experiment with adding nutmeg, cloves, allspice, cardamom, ginger, etc for a more apple spice vibe.
0.5-1 cup or 50-100g dried fruits
I prefer cranberries, but raisins, dried blueberries, goji berries, chopped dried apricots, chopped dates etc all work great!
0.5 cup or 50g dark chocolate chips (optional). I usually add cacao nibs though bc yum.
White chocolate chips could also be the move.
0.5 cup or 50g honey or maple syrup
0.5 cup or 50g coconut oil
Tablespoon of molasses (optional) (but I recommend) (DYK: molasses is a great plant-based source of iron and other minerals!! yaya)
Tablespoon of vanilla extract
Instructions:
Preheat oven to 350F or 180C.
Combine all dry ingredients
Add the wet ingredients and stir to combine, ensuring that everything is well-coated. (Here is where you can taste and adjust!)
Spread granola evenly on a baking sheet. I recommend using parchment paper, but if not, oil the pan well :)
Bake for 20-25 minutes, but be sure to check on it! It is more “done” than you think, so don’t let it burn! You can also stir halfway through cooking if you want it to be more even.
I promise it will be best if you let it cool completely before storing so it doesn’t get soggy (I was very emphatic about this in my notebook apparently)

Chunky-monkey (banana chips, peanut butter, chocolate chips, walnuts)
Matcha (matcha powder, white chocolate or yogurt chips) (add freeze-dried strawberries for even special-er)
White-Chocolate Macadamia (macadamia nuts, white chocolate chips)
