BW (bean wrap) (best wrap) (ever)
white beans, avocado, lemon zest, herbs, melty sharp cheddar (!!!!!)
The best part about being a 25 minute walk from the gym is that I ponder my lunch the whole way back from late-morning sessions. Void of distractions from WIEIAD reels and recipe videos with heavily exaggerated sound effects (do I need to hear the sound of your cutting board sliding across your kitchen counter?), I think through the contents of the fridge, mentally kneading my cravings and creative bandwidth like quarantine sourdough.
Glutes quaking (I was very brave and did Bulgarian split squats1), I knew I had a half avocado which required eating ASAP, and three more brown rice-meal burrito-sized tortillas (12 tortillas for £2 was a great deal but now I have to eat 12 brown rice-meal tortillas). I always have beans (obviously), and schlepped together a few other miscellaneous ingredients and leftover herbs…et voilá the result. I took my first bite, the bright herbs and lemon balancing out the hearty beans and crispy melted cheese, and (fruitlessly) began explaining to Diego (a cat) that this was the BEST wrap I had ever eaten (don’t think he got it) (pretty sure cats don’t like citrus). But, assuming your taste preferences are different from those of Diego, here is the recipe!
Bean Salad (for one) (ish)2:
100g (1/2 a can?) white beans (cannellini or navy or something)
CHOPPED HERBS: Cilantro and/or parsley, mint, and green onions but used what you have. Also if ONLY I had dill…Dill would be amazing here. Basil would probably be yummy too.
1/2 avocado, small chunks
Small handful of arugula/spinach/watercress or something, chopped. I used arugula and the peppery spice was perfect.
Lemon zest (like a tbsp idk)
Olive oil
Garlic powder (and onion if you don’t have green onion. Or if you really just like onion flavor idk)
Little bit of mustard (I prefer the grainy kind)
Salt, pepper (duh). I also put chili flakes because I have a Problem that makes me incapable of enjoying any food if there is no heat.
So I was going to add cucumber but I in fact just ate it all while I was cooking. I think I was thirsty lol.
Honestly you can add whatever. Go crazy. Celery would probably be pretty good. Or you could add some chicken or salami or even tuna if you wanted to.
The wrap:
1 burrito-sized tortilla (wheat, rice, etc whatever).
White cheese of choice. I used sharp white cheddar (I am in England, after all), but I think that feta, parmesan, goat cheese, etc would all be delicious.
How-To:
Mix up the bean salad. Make sure all of the stuff is chopped nice and small. Using a fork, mash up some of the beans and avocado so that it’s a little pastier.
Lay out your wrap and sprinkle some shredded cheese (or crumbled feta/goat cheese or whatever) all over.
Scoop in your beans.
Fold the wrap into a square.
Heat up a pan with some olive oil/butter and toast both sides.
NOW! Sprinkle a little extra cheese onto the top, and flip it back over to melt and crisp up some cheese on one side. This is optional but ELITE. It adds so much flavor and makes it crispy and amazing and ugh.

You could definitely just eat this white bean by itself, or with some rice/salad greens/toast
